Welcome to Diamond's Kitchen. We specialize in Huli Huli Chicken plates! We have spent the last few years perfecting our recipe and roasting technique to bring you some of the most delicious and succulent Huli Huli Chicken on Oahu. The Waipahu Food scene just became a little more interesting with the addition of our food truck! Whether you are looking for a great lunch spot or are an Oahu foodie, this is the spot for you! We are open Tuesday and Wednesday - closed Thursday - and open Friday and Saturdays from 10am until we sell out. Our Food Truck has a permanent spot in Tropicana Square near Arby's.

Diamond's Kitchen is a family-owned and operated food truck. What started as an interest and then side-income became a full-time business! We began by doing some catering at a few special events and then opened our food truck in the Kunia Park n Ride in 2021. We quickly realized how much people loved our Huli Huli Chicken and the care and time that we had put into perfecting our process.
Our loving and generous mothers-in-law also blessed us by providing recipes to the sauces and other sides that they had been making for years to add even more value to this concept. Add in a few more amazing and hard-working family members to help with the cooking, plating, and serving, and we are serving it up with the best of them!
